- 1 1 cup coconut milk (full-fat or light)
- 2 juice from 2 fresh limes (about 4 tablespoons)
- 2 2 tablespoons simple syrup or sweetener of your choice – Adjust to taste
- 0.5 ½ cup ice cubes – More if desired
- 2 2 ounces of rum – Optional
- Optional mint leaves, lime slices, shredded coconut
Instructions
- Gather all ingredients on your workstation. This prevents frantic searches for measuring spoons later.
- Open the can of coconut milk and give it a good stir to mix the cream and any separated liquid.
- Squeeze the limes into a small bowl or measuring cup. I’ve learned that rolling the lime on the counter before cutting it in half helps get more juice out.
- Add coconut milk, lime juice, and simple syrup to the blender. If you’re creating a tropical coconut-lime rum punch, toss in your rum now.
- Place the lid on and blend for about 10–15 seconds, just long enough for everything to unify.
- Add ice cubes and blend again. Keep an eye on the texture; if you want a thicker consistency, add more ice cubes.
I stop blending the moment I see a creamy, uniform consistency. If you over-blend, you might lose the thick, frothy top. That’s the sweet spot for this lime in the coconut recipe drink —velvety but still refreshingly light on the palate.
